Apple Crumble Muffins

Fluffy, melt-in-your-mouth delicious Apple Crumble turned muffins!
Ingredients:
Crumb Topping
* 1/3 cup of packed light or dark brown sugar
* 1 teaspoon of ground cinnamon
* 1/4 cup of unsalted butter, room temperature
* 2/3 cup of oatmeal (I used a mix of Scottish oatmeal and Instant oats)
Muffins
* 1 and 3/4 cups of all-purpose flour
* 1 teaspoon of baking soda
* 1 teaspoon of baking powder
* 1 teaspoon of ground cinnamon
* 1/2 teaspoon of salt
* 1/2 cup of unsalted butter, room temperature
* 1/2 cup of packed light or dark brown sugar
* ½ cup of unsweetened applesauce
* ½ cup of vegan sour cream or vegan yogurt
* 2 teaspoons of pure vanilla extract
* 1/4 cup of oat milk (or any non-dairy milk)
* 1 and 1/2 cups of peeled & chopped apples (about 2 medium apples)
Instructions:
1. Preheat oven to 425°F (218°C). Prep your muffin pan by greasing or lining with cupcake liners.
2. To make the Apple Crumble Topping: Combine brown sugar, cinnamon, oatmeal. Mix in room temperature butter – don’t overmix! Set aside.
3. To make the Apple Muffins:
* Mix dry ingredients: flour, baking soda, baking powder, cinnamon, salt in a large bowl and set aside.
* Mix wet ingredients: brown sugar, butter, applesauce, sour cream (or yogurt), vanilla, and oat milk.
* Slowly mix in the dry ingredients to the wet ingredients until fully combined.
* Fold in the apples.
4. Spoon batter evenly into the muffin pan.
5. Sprinkle Apple Crumble Topping on top.
6. Bake for 5 minutes at 425°F. Reduce oven temperature to 350°F (177°C) while the muffins are still in the oven, baking for an addition 16-18 minutes. You can tell they are ready when they have fully risen, and when you insert a toothpick which comes out clean.
7. Allow muffins to cool for 5 minutes.
