Banana Cake in a Cup

Satisfy your cravings with this rich Banana cake for one!
Ingredients:
- 1 banana
- ½ Teaspoon of Vanilla Extract
- 1 Tablespoon of Crunchy Salted Caramel Peanut butter (almond & peanut butter can be used too)
- 2 Tablespoons of Plant-Based milk (I used oat milk)
- 2 Tablespoons of Oat Flour
- ¼ Teaspoon of Baking Powder
- ½ Tablespoon of Brown Sugar for topping
- 1 Tablespoon Vegan Chocolate Chips & more for topping
- Pinch of cinnamon
- ½ Teaspoon of Maple Syrup for sweetness (optional)
Instructions:
1. In a bowl, mash banana and combine with nut butter, vanilla extract, and plant-based milk. If you want extra sweetness, add maple syrup in this step.
2. Add in oat flour, cinnamon, baking powder, and chocolate chips. Whisk with fork or spoon until mixed.
3. Pour into a bowl/cup/ramekin that has been greased (I used coconut oil spray).
4. Sprinkle with chocolate chips and brown sugar.
5. Heat in microwave for 1 minute. If it’s not ready, microwave again in intervals of 15-30 seconds. Time will vary depending on the size of the bowl/cup/ramekin.
6. Allow to cool, and dig in!
