BBQ Jackfruit Tacos

BBQ Jackfruit Tacos

Cruelty-free delicious jackfruit tacos, topped with a creamy spicy mayo sauce!
Ingredients:
For the Jackfruit:
- 1 can Jackfruit in brine
- ½ cup vegetable broth
- ½ cup BBQ sauce of your choice, or homemade bbq sauce
- 1 tablespoon brown sugar
- ½ teaspoon onion
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- ½ teaspoon chili flakes
For the Tacos:
- Cabbage
- Soft shell tortilla
- 1 Red onion
- Spicy mayo sauce: mix 2 tablespoon vegan mayonnaise, 1 tablespoon sriracha
Instructions
1. Drain rinse jackfruit. Over medium-high heat in a pan, cook your jackfruit in the vegetable broth for about 10-15 minutes, covered.
2. Once jackfruit is soft, with a spoon or fork, begin to crush the jackfruit so that it pulls apart evenly.
3. Add the bbq sauce, brown sugar and spices. Cook for another 20-30 minutes on medium-low heat. Stir occasionally.
4. While cooking prepare the rest of your taco ingredients. Be sure to heat up the tortillas on a pan, and don’t forget the spicy mayo!
5. Assemble and enjoy!
