Cinnamon Roll Pancakes

Pancakes with a delicious Cinnamon twist!
Ingredients:
For the Batter:
- 1 Cup of Flour
- 2 Teaspoons of Baking Powder
- 1/2 Teaspoon of Salt
- 1 Cup of plant-based milk (I use oat milk)
- 3 Tablespoon of Vegan Butter at room temperature (I use Earth Balance)
- 5 Tablespoons of Brown Sugar
- 2 Teaspoons of Ground Cinnamon
- 1 Sandwich Bag
For the Icing:
- 2 Cups of Powdered Sugar
- 1/4 Cup of Water
- 1 Teaspoon of plant-based milk (I used oat milk)
Instructions:
1. Making the Pancake batter - In a bowl combine the dry ingredients: flour, baking powder and salt. In a separate bowl combine the wet ingredients: plant-based milk and maple syrup. Pour the wet ingredients into the dry, and combine thoroughly until well mixed.
2. Making the Cinnamon Mixture: Combine room temperature butter with brown sugar and cinnamon. Spoon into a sandwich bag, and cut one of the bottom corners. This will be used as a piping bag. (Please refer to video below for reference)
3. Making the Icing Sugar Topping: Combine icing sugar with water and 1 tsp of plant based milk.
4. In a pan, melt vegan butter or heat neutral oil on medium high. Spoon in the pancake mixture and allow to cook for 3-5 minutes. While the pancakes cook, use your cinnamon sugar mixture (in your makeshift piping bag) to spiral onto the uncooked side of the pancake. Once the pancakes start to bubble flip, and cook for another 3-5 minutes.
5. Stack pancakes, sprinkle with powdered sugar, and drizzle icing sugar. Enjoy!
