Crispy Smashed Potatoes with Roasted Garlic Aioli


Yield: 10 Potatoes Prep Time: 25 Minutes Cook Time: 1 Hour

Chilling Time: 2 Hours

Full Time: 2 Hours 40 Minutes


This delicious dessert is sure to be a bit hit at your holiday dinners!

 

Ingredients:


Roasted Garlic Cashew Butter:

- ¾ cup of raw cashews (soaked for 3 hours or boil for 10+ minutes until softened)

- 1 garlic bulb (to be roasted with 1 tsp olive oil + pinch sea salt)

- ¼ cup of water

- ¼ teaspoon of sea salt

- ½ teaspoon of garlic powder


Smashed Potatoes:

- About 10 potatoes of your choice (small/medium sized potatoes work best, such as fingerling)

- 2 tablespoon of olive oil for baking sheet, about 3 tablespoons of olive oil for potatoes

- ¼ teaspoon of sea salt

- Fresh Rosemary or Thyme sprigs

- Seasoning for potatoes (I like to season with garlic and onion powder, rosemary, thyme)




Instructions:


1. To roast the garlic bulb, pre-heat oven to 450°F. Trim about a ¼” off the top of the bulb to expose the cloves. Drizzle with 1 tsp olive oil and a pinch of sea salt. Bake for 20-25 minutes until roasted and soft on the inside.


2. In the meantime, boil some water in a pot with the cashews. Allow to boil for 10 minutes until soft.


2. Rinse and drain cashews. Add to a high-powered blender with roasted cloves of garlic, water and sea salt. Blend until very smooth.


3. Boil potatoes until soft, and you can pierce with a fork.


4. Coat a baking sheet with olive oil. Smash the whole potatoes with a fork or the bottom of a glass to break open the skin. Brush on more olive oil until covering potatoes. Sprinkle on seasoning: garlic powder, onion powder, dried rosemary and dried thyme. (Please review video below for reference)


5. Bake in already preheated oven (450°F) until crispy, baking time can depend on size of potatoes, medium potatoes take about 25 minutes.


6. Serve immediately with a dollop roasted garlic cashew butter on each potato.
