Noodles with Creamy Tofu Sauce

Noodles with Creamy Tofu Sauce
Yield: 4 servings
Full Time: 20 Minutes
A fun and delicious way to use your tofu!
Ingredients:
For the Noodles:
3/4 tsp salt
1 package of firm tofu, broken into pieces (14 oz)
2 cloves of garlic, sliced
1/2 tsp organic sugar
Seasoning of your preference
2 tsp sesame oil
Noodles of your choice (best with flat noodles)
Top with sesame seeds, green onion, and cilantro (optional)
For the Chili Topping:
1 tbsp rice vinegar
1 +1/2 tbsp soy sauce
1 tbsp chili crisp, or chili oil
Instructions:
Cook noodles according to package instructions.
As noodles are cooking, prepare your chili topping: to a small bowl add the ingredients and stir to combine. Set aside
In a food processer (or blender), add the tofu, garlic, sugar, seasoning, salt and sesame oil. Add about 1 tbsp of water. Blend to combine. Add another tablespoon of water and blend again. Continue until the consistency is creamy.
When the noodles are done cooking, strain and add to a large bowl. Pour the tofu sauce on top, and toss until coated.
Plate the noodles and top with chili topping, sesame seeds, green onion and cilantro.
