Pumpkin Spice French Toast

Pumpkin Spice French Toast

Yield: 4 Servings Prep Time: 10 Minutes Cook Time: 15 Minutes

Full Time: 25 Minutes


The most fluffy, delicious, melt-in-your-mouth French toast with a hint of Fall!

 

Ingredients:


- 1 cup unsweetened plant-based milk (I used oat milk)

- 1/2 cup pumpkin purée

- 1/4 cup cornstarch

- 2 tablespoons brown sugar (packed) & more for cooking

- 1 teaspoon vanilla extract

- 1 teaspoon ground cinnamon

- 1/4 teaspoon nutmeg

- 8-10 pieces of thick bread

- Vegan butter for cooking (I used Earth Balance)


Instructions:

1. In a wide bowl, whisk together plant-based milk, pumpkin purée, cornstarch, brown sugar, vanilla, cinnamon and nutmeg until well combined.


2. In a large pan, melt butter on medium high heat.


3. Dip the bread in mixture to coat, and soak both sides.


4. Place on pan, and cook for about 2-3 minutes on one side until golden brown. Flip swiftly to cook the other side for another 2-3 minutes. While cooking, sprinkle brown sugar on the cooked side of the bread. Flip to caramelize over heat for about 30 seconds.


5. Serve with powdered sugar, butter, and of course, syrup! Enjoy!
