Spicy Chickpea Noodle Soup

Spicy Chickpea Noodle Soup

Fun play on "Chicken" noodle soup. Perfect for when you're feeling ill, or crave comfort on those chilly days.
Ingredients:
- 2 tablespoons of extra-virgin olive oil
- 1 medium yellow onion, chopped
- 2 stalks of thinly sliced celery
- 2 medium carrots, peeled and cut into thin rounds
- ¼ teaspoon of salt, more to taste
- ½ teaspoon of ground turmeric
- ½ teaspoon of cayenne pepper
- ½ teaspoon of chili flakes
- ½ tablespoon of poultry seasoning
- 1 can of chickpeas, rinsed and drained
- 2 tablespoons of chopped fresh parsley, plus extra for garnish
- 8 cups of vegetable broth
- 8 ounces noodles of choice (I used Fusilli)
Instructions:
1. In a pot, heat oil until shimmering. Add chopped onion, carrots and celery. Cook until vegetables are soft and onions are translucent.
2. In the center of the pot, add your spices – turmeric, salt, chili flakes, cayenne pepper and poultry seasoning. Stir constantly for about 10-15 seconds to wake up the flavours.
3. Add in vegetable broth, chickpeas, and fresh parsley. Allow to simmer for at least 15 minutes, and up to an hour.
4. Add in pasta of your choice and cook until soft.
5. Serve immediately. Top with more fresh parsley. Enjoy!
