Spider Web Brownies

Spider Web Brownies

Yield: 16 Brownies Prep Time: 15 Minutes

Cook Time: 40 Minutes

Cooling Time: 30 Minutes

Decorating Time: 10 Minutes

Full Time: 1 Hour 35 Minutes

You have never had such perfectly fudgy vegan brownies like these! With a fun Halloween twist!

Ingredients:

For the Brownie Batter:

- 4 tablespoons ground flax

- 1/2 cup water, boiling

- 1/2 cup vegan butter (I use Earth Balance), melted

- 1 cup coconut sugar

- 1 cup brown sugar

- 1 tablespoon vanilla extract

- 1 cup all-purpose flour

- 1 cup cocoa powder, unsweetened

- 1/2 teaspoon salt

- 1 teaspoon baking powder

- 1/2 cup vegan chocolate chips

- Brownie Pan

For the Spider Web:

- 1 cup powdered sugar

- 2 tablespoons plant-based milk

- Sandwich bag

Instructions:

1. Start by heating your oven to 350° F. Line a pan (7 x 11) with parchment paper. This will make for easy removal.

2. Flax egg: To make your flax egg, combine ground flax with water. Set aside to thicken.

3. In a small bowl, melt 1/2 cup of vegan butter. You can measure the butter two ways: melt the butter and then measure out 1/2 cup, OR fill a measuring cup halfway (1/2 cup) with water, and scoop butter to submerge in water until the measuring cup reads 1 cup. Empty water and continue.

4. In a large bow, add melted butter with the sugars, whisk to combine. Then add the flax egg mixture and vanilla. Whisk again.

5. In the same bowl, sift in the flour and cocoa powder to the wet mixture. Then add the salt and baking powder. Mix until combined, be careful not to overmix. Fold in the chocolate chips.

6. Transfer the batter into your pan, spreading out batter evenly.

7. Bake for 40 minutes. *The brownies will look undercooked, but will firm up as they cool*

8. Remove from oven, and allow brownies to cool for 15 minutes in pan, then pull them out with parchment paper and cool for another 15 minutes. Slice brownies into squares.

9. While brownies are cooling, prepare your icing for the spider web design. In a bowl, combine powdered sugar and plant-based milk. Spoon into a sandwich bag, and press to one corner. Cut the corner with kitchen scissors.

10. After brownies have cooled completely, flip the brownies so the bottom is facing upward. This make for a cleaner, easier work space. Use your bagged icing to design the spider web. Allow icing to harden completely. (Please refer to video below on how to draw a web decoration)

11. Enjoy!
