Vegan Caesar Salad

Vegan Caesar Salad

Yield: 5 Servings Prep Time: 40 Minutes

Full Time: 1 Hour 15 Minutes

So good they can't tell it's Vegan!



For the Chickpea Croutons:

- 1 Can of Chickpeas

- 1 teaspoon of Olive Oil

- ½ teaspoon of Salt

- 1 teaspoon of Garlic Powder

- ½ teaspoon of Cayenne Pepper (Optional)

Caesar Salad Dressing:

- ½ Cup of Raw Cashews, soaked/softened

- ¼ Cup of Water

- 2 Tablespoons of Olive Oil

- ½ Tablespoon of Dijon Mustard

- 1 Teaspoon of Garlic Powder

- 2 Cloves of Garlic

- ½ Tablespoon of Vegan Worcestershire sauce (Optional – I used Wizard’s)

- Squeeze of lemon juice (About ½ tablespoon)

- Salt and pepper to taste

Cashew Parmesan:

- 1/3 Cup of Raw Cashews

- 2 Tablespoons of Hemp Seeds

- 1 Clove of Garlic

- 2 Tablespoons of Nutritional Yeast

- 1 Tablespoon of Olive Oil

- 1 Teaspoon of Garlic Powder

- ½ Teaspoon of Salt


1. Soak cashews in water for about 3 hours until soft. You can also boil cashews in water to quicken the process, for about 15 minutes. Drain and rinse.

2. To make the Chickpea Croutons: Preheat oven to 400°F (200°C). Drain and rinse canned chickpeas. Rub chickpeas with paper towel to dry. Place chickpeas on a baking sheet and drizzle with olive oil. Shake the baking tray to roll the chickpeas to coat. Sprinkle chickpeas with garlic powder, salt and cayenne pepper. Roll again. Roast chickpeas for 20 minutes, then roll again. Roast for another 15-20 minutes. The chickpeas are done when they're of a golden colour, and will crisp up as they cool.

3. For the Vegan Caesar Dressing: In a blender combine softened cashews, along with water, olive oil, Dijon mustard, garlic powder, garlic, vegan Worcestershire, and lemon. Blend on high until the dressing is smooth. Once combined, add salt and pepper to taste.

4. For the Cashew Parmesan: Add cashews and garlic to food processor, and process until fine. Add in the rest of the ingredients, pulse in processor until combined.

5. Assemble with croutons, dressing and parmesan. Enjoy!
